While I can manually update the time on the Open Spot, within a few minutes it's off by several minutes. I manually updated it about an hour ago and it's now 14 mins slow. Calls shown on the status page are showing the correct time, which I guess is based on the network time.
Is the device time of any importance, given it's lack of accuracy and the network time stamping calls shown on the status page?

The web interface only queries the time from the OS2 when the web interface is loaded. Browsers usually stop running timers when the browser tab is inactive, so the web interface's time won't be updated when the tab is not active, hence the inaccuracy. What you need to do is to reload the web interface to re-query the time from the OS2. This is already in our TODO list to automatically requery the time from the OS2 when the browser tab is reactivated.
